Sweet or salty? This house will take a little bit of both. These raw cookies have become a go-to for breakfast on the run, dessert, post nap kiddo pick me up - or just because you want one. They take a few minutes to pull together, so get to it.

3/4 cup almond butter

1/2 cup diced, dried apricots or cranberries

1/4 cup pumpkin seeds (you can call them pepitas if you're feeling fancy)

1 cup rolled oats (again with the gluten free if you're into that)

1/2 cup shredded coconut

1/2 cup ground flax seed

3/4 cup dark chocolate chips (mini work best)

1/3 cup raw honey or maple syrup

Combine all ingredients into a bowl, dig your hands in, mix well, roll into balls (wet your hands first), let set in fridge for 20 minutes. And you're done.
